Verdicchio dei Castelli di Jesi classico superiore DOC Organic

Clear amber-white wine, savory and elegant on the nose, with a good level of acidity, offering floral and fruit notes with a subtle saline touch. The grapes come exclusively from indigenous Verdicchio vines cultivated in Montecarotto. The name Eiréne comes from Greek and means “peace.” Excellent for aperitifs, pairs perfectly with shellfish, crustaceans, and Adriatic-style fish dishes.

Vines trained to a vertical trellis system, using double Guyot pruning. Organic viticulture with permanent cover crops, bud selection, leaf thinning, and cluster thinning.

Hand-harvested into small crates.

Vinification

Careful grape selection followed by gentle whole-berry pressing. Fermentation with indigenous yeasts at low temperature for 20 days.

Ageing

Aged on fine lees.
